I don’t know about you, but I am always looking for a healthy breakfast alternative that is not eggs.  Don’t get me wrong, our house eats our fair share of eggs.  We love eggs!  Sometimes though, I just want something else.  One of our go-to weekend breakfast is waffles.  We love some waffles!  For a long time, I would buy the pre-mixed box of Kodiak Cakes from Costco.  We would make a big batch on Sundays and put them in the freezer for the week.  Whenever we wanted one, we would just pop it in the toaster!  Homemade waffle before work?  Done!  After a year, we kind of got burned out on Kodiak Cakes.  Think, waffle hiatus.  Lately, Jett had been begging for some Mickey Mouse waffles, and if you know about our family, we LOVE Mickey Mouse. Paleo Pepper Steak with Garlic Cauliflower Mash Time to dress up the classic meat and potatoes dinner!  At our house, steak and mashed potatoes is our go-to family meal.  Everyone gathers around the grill to visit while steaks are cooked to perfection.  The perfect accompaniment to a grilled steak, homemade mashed potatoes of course!  As we know, mashed potatoes are not exactly “healthy.”  The trending healthy replacement?  Cauliflower Mash!  It looks like mashed potatoes and tastes great! I was an avid runner and gym goer but became faced with some health issues after the birth of my 2nd and 3rd child. The global gym wasn’t working for me anymore. I was still about 20 lbs over weight.
