Paleo Pepper Steak with Garlic Cauliflower Mash
Time to dress up the classic meat and potatoes dinner! At our house, steak and mashed potatoes is our go-to family meal. Everyone gathers around the grill to visit while steaks are cooked to perfection. The perfect accompaniment to a grilled steak, homemade mashed potatoes of course! As we know, mashed potatoes are not exactly “healthy.” The trending healthy replacement? Cauliflower Mash! It looks like mashed potatoes and tastes great!
This week, I decided to paleo-fy one of my favorite meat and potato meals. This recipe is a modification of one of my step-dads (David Ryan) signature dinners. It’s quick, easy, and cost effective!
Paleo Pepper Steak
Servings: 6
Time: 45 Minutes
Ingredients
- 2 lbs Eye of Round or Top Round Roads
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1/3 Yellow Onion
- 2 tablespoons Paleo Powder (These people came in and dropped samples and I have loved using ever since!)
- 2 tablespoons Ghee plus 1 tablespoon for gravy
- 2 tablespoons tapioca powder
- 1 cup Beef Broth
- 1.5 teaspoons Salt
- Dash Pepper
Instructions
- Cut bell peppers and onions into strips
- Slice Beef into thin strips
- In a large dutch oven or pot, melt 2 tablespoons ghee
- Put beef into dutch oven and season with Paleo Powder, salt, and pepper
- Cover with lid and let simmer for 15 minutes
- After meat has simmered and browned, add bell peppers and onions. Cover again and let simmer 5 minutes.
- While meat and pepper are simmering, prepare to make the gravy base.
- In a small sauce pan, melt 1 tablespoon ghee.
- Stir in 2 tablespoons tapioca powder to make a paste.
- Once paste is made, slowly stir or whisk in 1 cup beef broth. Continuously stir until there are no lump. Bring to a boil and let cook for about 2 minutes until gravy base is formed.
- Pour into beef and pepper mixture. Simmer 2-3 minutes more.
- Serve!
Paleo Cauliflower Mash
Servings: 6
Time: 15 Minutes
Ingredients
- 1 head Fresh Cauliflower or 1-16 oz bag frozen cauliflower
- 2 tablespoons Ghee
- 1/3 cup Almond Milk
- 1.5 tablespoons minced garlic
- 1.5 teaspoons Salt
- Dash Pepper
Instructions
- Cut cauliflower into florets. If using frozen, skip this step.
- Steam in pot over high heat for 5-8 minutes until very soft.
- Place steamed cauliflower into a blender or food processor.
- Add ghee, garlic, salt, and pepper.
- Blend for 30 seconds.
- Add almond milk.
- Blend for 1 minute or until smooth.
- Serve topped with parsley and paprika.
