I don’t know about you, but I am always looking for a healthy breakfast alternative that is not eggs. Don’t get me wrong, our house eats our fair share of eggs. We love eggs! Sometimes though, I just want something else. One of our go-to weekend breakfast is waffles. We love some waffles! For a long time, I would buy the pre-mixed box of Kodiak Cakes from Costco. We would make a big batch on Sundays and put them in the freezer for the week. Whenever we wanted one, we would just pop it in the toaster! Homemade waffle before work? Done! After a year, we kind of got burned out on Kodiak Cakes. Think, waffle hiatus. Lately, Jett had been begging for some Mickey Mouse waffles, and if you know about our family, we LOVE Mickey Mouse. This is what prompted me to try a new, healthier waffle recipe.
I googled “gluten free waffles,” and came across a recipe from Bob Red Mill that I really liked. The original recipe is NOT dairy free and that can be found here, but my version is! Check it out below!
Fluffy Gluten Free – Dairy Free Waffles
Makes: 8
Time: 30 minutes

Ingredients
- 1-1/2 cups Gluten Free All Purpose Baking Flour
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Stevia
- 1 Tbsp Melted Coconut Oil
- 3/4 cup Almond Milk
- 4 Eggs SEPARATED
- 1 tsp Vanilla Extract
Instructions
- Pre-heat a waffle iron.
- In a large bowl, mix the flour, baking powder, soda, salt, and stevia together.
- In a separate bowl, whip the EGG WHITES ONLY until they form stiff peaks or resembles whipping cream. I would suggest using a hand mixer for this step.
- In a small bowl or glass measuring cup, whisk together milk, yolks, vanilla, and oil. Add the milk mixture to the dry ingredients and blend together. With a rubber spatula, slowly fold in egg whites with the rest of the ingredients. The entire mix should be light and fluffy.
- Spray waffle iron and begin making waffles. Follow the waffle machine instructions. Typically 3-5 minutes depending on your waffle iron
If you don’t have a waffle iron, you can make pancakes! Just add 1/4 cups to 1/3 cups more almond milk! These waffles or pancakes can be made and frozen to have during the week. Just throw them in the toaster! Enjoy!
